Let's talk about snacks, baby!

I have been working to get more consistent about our meal prep on Sundays for the week ahead. It helps us make healthier choices for meals and snack time. Another tool we've been utilizing since last December has been a grocery delivery and I feel like it's helped us avoid impulse (and junk) purchases, which tended to be less mindful.

One of our goals with the little guy is to raise him with a varied palette for food and willingness to try new things. While toddlerhood keeps us humble regarding that, we still have some great days when he gets adventurous. One of the ways that we've been encouraging him to try new things is to use plates, snack boards by Clover & Birch, and utensils that fit for him and plate his meals to promote interest in different foods.

Today’s meal prep items include:

  • Hard-boiled eggs

  • Snack packs with eggs, carrots, hummus, cheese stick, blueberries

  • Chia seed pudding

  • Veggie prep (washed, cut, ready for the pan)

    • Prepared sweet potatoes & brown rice today because it can be cold

  • Mason jar salads for next 3 days

I am the first to tell you that meal prepping is not my favorite, but it’s been a necessity, especially when I want to focus on eating well and avoiding reaching for less-than-ideal food choices. I don’t count my calories, but I do tend to focus on getting enough protein and fat in my day, especially with my daily workout goals.
